This is a recipe from Jen’s childhood. Her mother used to fry these burritos, and they would dip them in a mixture of ketchup and Texas Pete hot sauce. She started making them again because it is a very budget-friendly meal.
Jen can make about 8 burritos with one small can of fat-free refried beans and 1 to 1 1/2 cups of shredded cheese. Instead of frying them, she covers in olive oil and cooks them on a skillet until they are golden brown on each side (see the picture). The kids are crazy about them, and our family of 5 eats all 8 burritos in one meal!
Ingredients
- 16 oz can of refried beans or Homemade Refried Beans
- 10 oz can of red enchilada sauce
- Shredded cheese
- Tortillas
- Chopped onion
- Chopped jalapeno pepper
- 2 TBS olive oil
- Salsa
- Franks Red Hot sauce
Directions
- Fry raw tortilla shells
- Spread refried beans on shell
- Add onion and jalapeno pepper
- Sprinkle cheese
- Spoonful (or two) red enchilada sauce
- Roll tortilla
- Spread with olive oil
- Fry in pan until golden brown
- Top with salsa and Franks Red Hot sauce
